Cauliflower is low in fat but high in dietary fiber, folate, water and vitamin C. It can be boiled, fried, steamed, and eaten raw or roasted. While cooking take only the florets and remove outer leaves and thick stalks. Preparations of cauliflowers are very simple.
Roasted Cauliflower
Ingredients
• One whole cauliflower
• 1 table spoon onion paste
• 1 tablespoon garlic paste
• ½ teaspoon ginger paste
• 2 cinnamon
• 2 inches cardamom
• 2 cloves
• 4 teaspoon butter oil
• Red chili flakes
• Saffron
• Milk 3 table spoon
• Curd 2 table spoon
• Salt
• Sugar
• Water
Preparation
Remove leaves and keep the cauliflower whole. Soak it in salted warm water for 10 minutes. Take it out and strain the water. Grind cardamom, cinnamon and clove in a blender. Soak 2 pinches of saffron in warm milk to bring out the flavor & color. Whip the curd.
Process
Heat butter oil in a pan and fry the cauliflower till light brown. Then keep aside. Again pour oil and fry onion, garlic and ginger paste. Fry them well. Add curd and stir continuously to fry it well. When the entire thing is well cooked sprinkle salt and sugar to taste. Now add the cauliflower in the pan. Place the floret portion down so that the spices will get into it easily. You may add little water to make cauliflower tender. When every thing is ready sprinkle chili flakes, ground cardamom, cinnamon and clove upon it. And at last add the saffron milk to bring the color and ultimate flavor. Remove the preparation from the heat and serve hot.
Tangy Cauliflower
Ingredients
• Cauliflower
• Olive oil
• 2 table spoon lemon juice
• Cheese
• Salt
• 3 green chilies
Preparation
Take only the florets. Cut them in equal size. Wash well and strain the water. Grate mozzarella cheese in 1 cup amount. Remove seeds of green chilies and chop them finely.
Process
Heat olive oil in a pan. Pour cauliflowers. Fry them well. Sprinkle salt and stir them well. When the cauliflower gets tender add lemon juice. Put it in an oven proof dish, add the cheese and bake in low temperature till the cheese melts and spreads. Take it out and serve garnished with chopped green chilies.
