Planning to go on a strict diet? In that case there can be nothing better than eating different types of salads throughout the day. They’re not just nutritious but also filling and healthy. Here’s some fresh salad recipes.
1. Tuna Salad
Ingredients
10-15 radishes cut into halves
1 cucumber cubed
3 celery sticks cubed
1 yellow pepper diced small
10-15 cherry tomatoes halved
4 spring onions sliced
3 tbsp olive oil
Salt and pepper to taste
200 g canned tuna flaked
2 tbsp parsley
Lettuce leaves to serve
Juice and rind of 2 lemons
Method
1. Stir salt and lemon juice together in a bowl until dissolved. Pour this over the vegetable mixture. Add oil and pepper. Toss to coat the mixture well, then cover and chill for an hour.
2. Add parsley to the drained tuna, toss gently with the vegetables. Arrange lettuce leaves on a platter, spoon the salad in the centre and garnish with strips of lemon rind.
2. Mango Tomato Onion Salad
Ingredients
2 large mangoes peeled and sliced in semi-circles
4 large, firm tomatoes sliced round
1 large onion sliced round
1 cucumber sliced round
Dressing
2 tbsp oil
3 tbsp lemon juice
2-3 tbsp hot pepper sauce
Sugar, salt, pepper to taste
Chives/cilantro/celery to garnish
Method
Arrange the tomatoes, onions, cucumber, mangoes, in the same order, in concentric circles. Mix all the ingredients for the dressing. Pour the dressing over the salad just before serving.
3. Cabbage, Spinach And Carrot Salad
Ingredients
1 head of cabbage shredded
8-10 baby carrots grated
Spinach chopped (same quantity as cabbage)
1 onion grated
1 hard-boiled egg sliced
1 cup mayonnaise

1. Toss all the vegetables in a salad bowl, pour over the mayonnaise and garnish with slices of boiled egg.
4. Cabbage, Apple And Orange Salad
Ingredients
1 head of cabbage
2 oranges, peeled and cut into small sections
1 apple grated

1 cup mayonnaise
1 cucumber sliced round
1 tomato sliced round
Method
Mix the cabbage, apple and oranges with the lemon juice. Arrange in a salad bowl, pour mayonnaise over it and garnish with cucumber and tomato slices.
5. Lettuce, Cucumber And Ham Salad
Ingredients
1 crisp lettuce
1 cucumber
1 bunch watercress
4 spring onions
4 ham slices
Dressing
1 tbsp olive oil
1 tsp lemon juice
1 tsp apple juice
1 tsp honey
1 clove garlic
Large pinch mustard powder
Salt and pepper to taste
Extra virgin olive oil
Method
Select the best lettuce leaves , wash, and pat dry. Place in a large bowl, chill. Slice cucumber, chop spring onions, and sliver ham. Mix together all the salad ingredients and add to the lettuce. Shake the dressing ingredients and pour over the salad. Drizzle with some extra virgin olive oil just before serving.
6. Thai Chicken Mince Salad
Ingredients
500 g chicken mince
1 stalk lemon grass chopped fine
3 kaffir lime leaves chopped
4 red chillies
4 tbsp lemon juice
2 tbsp fish sauce
2 spring onions sliced
2 tbsp fresh coriander chopped
Fresh mint for garnish
Mixed salad leaves, cucumber, tomato slices for serving
Method
Cook chicken mince with a little water. In a large bowl, mix all the ingredients with the mince. Arrange mixed salad leaves, cucumber, tomato slices on a platter, spoon chicken mixture and garnish with springs of mint.
