Ingredients Required

1 pound of asparagus

1/4th cup of soy sauce

4 large eggs

1/4th cup of unsalted butter, at room temperature

Kosher salt

Sea salt

1 teaspoon of white vinegar

2 tablespoons of vegetable oil

Method Of Cooking

1. Place a large pot on medium heat and fill the utensil halfway up with water. Let the water start boiling and let it boil for a few seconds before adding anything to it. Once the water comes to boil, add enough salt so that is water is very salty. Then take a teacup and crack open one of the eggs in it. Do not whisk the egg, keep it as it is.

2. Then take a sauce pan and fill it halfway up with water. Place the saucepan on the hob and adjust the heat level to high. Add vinegar to the water and let the water come to boil. Then reduce the heat to low as soon as it starts boiling, so that the water simmers slowly. Once that happens, gently tilt the cup over the sauce pan, so that it touches the water and then slowly slip the egg into the simmering hot water.

3. Once the egg is hardened at the outer side and poached, remove it carefully with a slotted spoon so as to avoid breaking it. Then crack open the rest of the eggs and poach them one by one in the same manner as you did with the first egg. Once done, transfer the eggs directly to 4 serving plates, so that you don’t have to pick them up later for serving.

4. Once done, remove the sauce pan from the heat and place a skillet instead. Add vegetable oil to the skillet and let it heat up until it starts sizzling. Meanwhile, cut off the hard ends of the asparagus and then drop them carefully into the hot boiling water. Cook the asparagus for 20-30 seconds or less if the veggies are too thin. Once done, separate out the asparagus with a spider strainer and shake them gently to completely get rid of any dripping water.

5. After that, immediately transfer the asparagus into the hot skillet and toss them continuously until they are slightly browned and develop blisters on the skin. Then add the soy sauce and toss for another 5-6 seconds to nicely coat the veggies in the sauce. As soon as the soy sauce completely evaporates, lower the heat and add 2 teaspoons of water and the butter to the asparagus and toss for another 5 seconds or until the butter is melted and slightly browned.

6. You may add a bit more water if the sauce looks a bit too dry. Then transfer the cooked asparagus to the serving trays and serve with the poached eggs by sprinkling some sea salt over each egg.
