Savoury Recipe for Rice Cakes with Rich Herb Sauce

Prepare this flavourful, high-fiber rice cake recipe by combining rice along with several spices and deep red kidney beans.

Ingredients

Brown rice, cooked (190 grams)



Any variety of smoked sausage, finely diced (1/2 lb)



Deep red kidney beans, soaked and cooked (3/4th cup)



All-purpose flour (duo tablespoons)



All bran cereal (1/4th cup)



A whole egg or the white portion of duo eggs



Canola oil (1 tablespoon) and additional to drizzle



Ground chili peppers (1 teaspoon)



Cumin powder (1/2 teaspoon)



Ingredients for the Rich Herb Sauce

Freshly picked leaves of parsley (quarter cup)



Garlic, mashed (2 pods)



Low-fat Mayo or sour cream (1 tablespoon)



Malt vinegar (1/2 tablespoon)



Celery, minced (2)



Salt and freshly cracked peppercorns as per taste



Procedure

Brown the diced sausages in a large-sized fry pan containing the canola oil and place into a bowl. The cooked red kidney beans are then pulsed along with the all purpose flour, freshly cracked black peppercorns and salt in a food processing kitchen appliance till roughly coalesced. Empty the constituents into a bowl containing the cooked sausages and mix along with the cooked brown rice, all bran cereal, cumin powder, ground red chilli peppers, egg, salt and cracked peppercorns.

Manually shape the mix to form small flat cakes that have around half-inch thickness and place aside. These are now fried in a non-stick pan with some oil over moderate heat till they develop a light brownish colour and have crisped up. This would take approximately seven to eight minutes per side.

The velvety herb sauce that accompanies the delicious rice cakes can be easily prepared by thoroughly combining the above mentioned ingredients. Serve the rice cakes on a bed of assorted salads and a liberal drizzling of the rich herb sauce. Sugary Fried Red Bean Rice Cakes

Ingredients

Azuki bean paste or sweet red kidney beans, cooked (225 grams)



Dark brown sugar (175 grams)



Sweet rice flour (225 grams)



Fresh milk of coconut (210 milliliters)



Wanton/dumpling wrappers (a pack)



Procedure

Commence by boiling the fresh milk of coconut along with the dark brown sugar in a pan over moderate flame till total dissolution occurs and set aside for cooling. The sweet rice flour is now mixed into it till no lumpiness remains. Next the azuki bean paste or sweet red beans is added to this.



The mixture is then placed in a square tin and steamed for thirty minutes in a steamer and then taken out for properly cooling it. Use a knife for cutting out squares measuring about three centimeters each. These blocks are then wrapped in pastry sheets and deep-fried till light golden-brownish. Serve immediately.
