These chicken recipes have struck the right chord with many people who have eaten at my house. These three chicken recipes are simple to prepare, and strangely, a very no-stress dishes.
Dry Chicken In Red Gravy
Ingredients
1 kg boneless chicken
1 tbsp cumin seeds
300 g onions chopped
10 green chillies chopped
25 g ginger chopped
1 pod garlic chopped
500 g tomatoes chopped
1 tsp turmeric
2 tbsp ghee
Salt to taste
To be crushed coarsely
10 g black peppercorns
20 g coriander seeds
15 g cumin seeds
10 dry red chillies
Method
Heat ghee in a wok, crackle the cumin seeds, add the chopped onions, green chillies and ginger, and fry till the onions are lightly browned. Add the garlic and sauté for 5 minutes.
Add the tomatoes and let them cook. Add the turmeric and chicken, and when the chicken is half cooked, add the pounded spices. There is no need to add any water since the chicken will cook in its own juices.
2. Baked Chicken With Delicate Flavours
Ingredients
1 chicken (about 800 g)
Marinade
50 g almonds
15 g poppy seeds
10 g chironji
5 tsp ginger paste
3 tsp garlic paste
Fresh coriander chopped
Fresh mint chopped
1 ½ tsp red chilli powder
1 ½ tsp cumin powder
2 tbsp lemon juie
Gravy
250 ml curd whisked
250 g onions browned
8 green cardamoms
6 cloves
6 green chillies
3 sticks cinnamon
1 tsp saffron
Method
Blanch almonds, roast along with poppy seeds and chironji till each emits its own aroma and is lightly coloured. Pulse in a blender with water, add the remaining ingredients and rub the pricked chicken with this. Leave aside for 2 hours. Planes con niños en Valencia
Grease a baking dish with ghee, place the marinated chicken and pour the whisked curd on it. Add the browned onions, spices, chillies and saffron. Cover it with a lid and cook in the oven on low heat till tender.
3. Chicken In White Gravy
Ingredients
8 chicken breasts
1 ltr chicken stock
4 green cardamoms
3 blades javitri
3 cloves
2 brown cardamoms
2 bay leaves
Salt to taste
150 g onion chopped
10 g ginger chopped
6 flakes garlic chopped
4 green chillies
2 tbsp ghee to fry onion
30 g almonds
3 tbsp milk
Gravy
1 tbsp lemon juice
1 tsp white pepper
¼ tsp clove powder
¼ tsp mace powder
½ tsp green cardamom powder
½ tsp saunth powder
200 ml fresh cream
2 drops kewra
Pinch of saffron soaked in hot milk
Method
Heat the stock, add all the spices, bring to a boil. Reduce to simmer, add chicken and poach till its done through. Keep aside. Strain the stock and reserve for the gravy. Heat ghee in a wok, add the chopped onions, garlic, ginger, green chillies and fry till the onions are translucent.
Cool and blend into a paste. Blanch the almonds, blend with milk to a smooth paste. To make the gravy heat ghee in a wok, add onion paste, stir fry till it gets a sheen. Add the almond paste, stock, and boil till it has a medium thick consistency.
Add the lemon juice, white pepper, clove, mace, green cardamom powder, saunth, chicken pieces and cream. Let it boil. Remove from heat, add saffron and kewra. Serve hot.
