Ingredients Required
14 large corn tortillas
2/3rd cup of chicken broth
1 cup + 2 tablespoons of shredded Monterey Jack cheese
1 medium sized onion, diced
1 clove of garlic, minced
1 cup + 4 tablespoons of salsa
4 cups of cooked chicken, cut into cubes
7-8 mushrooms, diced
12 ounces of cream of chicken soup
1 cup + 2 tablespoons of cheddar cheese, shredded
Salt, to taste
Vegetable oil, for frying
Method Of Cooking
1. Preheat your oven to 350 degrees Fahrenheit and prepare the baking tray by greasing it thoroughly with cooking spray. Once done, set aside the tray and then fetch a heavy bottom skillet. Place the dry and clean skillet on the hob. Light the flame and keep it on low. Grease the skillet with a teaspoon of oil and then slowly tilt the skillet to spread the oil in it. 2. Let the oil heat up and then add the onions to it. Fry the onions until slightly tender and translucent. Once done, add the garlic and fry for another 1 minute or until fragrant. After that, put the salsa and the chicken broth into the skillet and cook the sauce on medium low heat until it thickens up a bit. Let the salsa simmer for 3-4 minutes and then remove it from the stove.
3. Transfer the cooked salsa to a bowl and then rinse the skillet discarding anything that may be sticking to the skillet. Once completely cleaned, wipe the skillet with paper towels. Then place back the skillet on the oven and set the flame on low. Now take the corn tortillas and slice them into 1-inch thick strips. After that, grease the skillet with 2 tablespoons of oil and dump the sliced tortillas into the hot oil. Fry the tortilla slices until they are slightly browned.
4. Once done, transfer the tortilla strips with a slotted spoon and grease the skillet with some more oil. Once the oil becomes piping hot, add the mushrooms and fry them until the mushrooms are soft and wilted. Now take the baking tray and put the fried corn tortilla strips into the tray. Spread them with your hands and then spread the cream of chicken soup, the fried mushrooms, cooked chickens, the salsa, ½ cup of Monterey jack cheese, salt, and ½ cup of shredded cheddar cheese all over the tortillas.
5. Once done, insert the tray into the preheated oven and bake for 30-40 minutes or until bubbly. Then take out the tray and spread the remaining cheese on the top of casserole. Place back the tray into the oven and bake for another 2-3 minutes or until the cheese at the top melts.
