Cream of vegetable soup is an amazing and delicious appetizer. This soup has always been my favorite one and today I’m very glad to share with you the recipe of this healthy and yummy soup.

You can find thousands of guidelines on true cream of vegetable soups, but the variance among them are subtle at best. Basically, to prepare this soup, all you need to do is cook the veggies you want with good flavors and again reheat it with rich cream.







Health Benefits Of Cream Veg Soup

Cream of vegetable soup has lot of health benefits as it contains the extract of vegetables. This soup is full of essential nutrients and vitamins which are good for children and people of all ages. To keep it healthier, try to use lesser amount of butter and cream.

This soup is an excellent idea to make your kids eat different vegetables. Even, my kids hate vegetables and are not a veggie soup perple but still they love this soup because they don’t even know there are veggies in it. I see lot of room for variety in this soup hence I always use different vegetables and spices to make it more tantalizing and appealing.



How To Prepare Cream Veg Soup



Preparation Time: 15 Minutes



Cooking Time: 30 Minutes



Makes: 5 Servings

Ingredients

2 tablespoons of Olive oil



2-3 cloves of garlic



5 cups mixed vegetables (broccoli, potatoes, carrots, turnips, celery)



3/4 cup rice



5 cups vegetable stock or water



Salt and freshly ground black pepper to taste



1 cup half-and-half or heavy or light cream



For Garnishing

1 cup of Parsley leaves, finely chopped



1 cup of Cheddar cheese, shredded Cabras de Angora



Preparation

First, take all the vegetables and wash them thoroughly. Then cut them into small chunks and keep aside. Take a deep saucepan and heat olive oil in it. Add minced garlic cloves and sauté for a minute then add chopped vegetables (broccoli, carrots, turnips, celery) and fry again for 2 to 3 minutes.





Now add rice and vegetable stock or water and cook on high heat until it comes to a boil. Then, lower the heat to medium. Cover with a lid and simmer the vegetables for about 10-12 minutes or until they become tender. Put off the flame and let the mixture cool down.



Take a blender and blend the mixture into a smooth puree. Transfer this puree to saucepan again and reheat over medium heat. Add salt and pepper and mix well. Finally add cream and cook for another 1-2 minutes. Your lip-smacking cream veg soup is ready to relish. Transfer into a serving bowl and garnish with chopped parsley. Sprinkle with shredded cheddar cheese and serve hot with croutons.



Tips

1) This soup can be prepared one day ahead. Cover it and refrigerate for up to 2 days, and reheat before serving.

2) You can use whatever fresh herbs or vegetables appeal to you, and take advantage of spices as well.

3) For cooking, you can use water or milk, but it’s best if it is stock.

4) Adjust the seasonings as per your taste.
