The cheese is marinated in yoghurt and a medley of spices and grilled along with veggies. This appetizer not only tastes great but also looks wonderful on account of the varied colored veggies included. This recipe uses very little and hence is healthy too.
Moreover, paneer is an excellent source of protein. We are also including veggies such as bell peppers, tomatoes and mushrooms in this recipe to make it more nutrient-rich. Ingredients
4 ounces paneer cut into medium sized chunks
2-3 green bell peppers diced
1 onion diced
2 tomatoes diced
6-8 mushrooms diced
Salt to taste
2 cups plain yoghurt
1 spoon paprika powder
1 spoon cumin powder
2 spoons chaat masala powder
1 spoon garam masala powder
1 spoon freshly minced garlic
1 spoon freshly minced ginger root
2 spoons butter
Method
To make paneer tikka, first prepare the marinating sauce for the paneer and veggies. For this, take yoghurt in a large bowl. To this add salt, paprika powder, cumin powder, garam masala powder, chaat masala, fresh ginger and minced fresh garlic. Mix all ingredients thoroughly well and keep aside. Dice all the veggies including bell peppers, onions, mushrooms and tomatoes to medium sized cubes. Add the diced paneer cubes and the veggies to the marinating sauce and leave for at least one hour. You can keep the marinated veggies and paneer in the refrigerator so that the sauce sticks better onto the paneer and the veggies.
After an hour, the paneer and veggies are ready to be grilled. For this pre-heat your grill to medium. Take skewers and thread two paneer cubes on them. Next, thread the bell pepper, tomato, onion and mushrooms onto the skewer. Follow it up the marinated paneer and repeat the same arrangement of veggies. Brush the paneer and veggies with a light coat of butter. This will give the paneer a nice golden brown glow when it gets grilled.
Grill the veggies and paneer on medium heat till the paneer turns lightly golden brown. Grill the skewer on each side for 4-5 minutes. Rotate the skwerer periodically so that the paneer and veggies get done on all sides. Ensure that you do not over-cook the paneer or it will turn tough and rubbery.
The paneer must remain moist and soft when the dish finally gets done. After the paneer and veggies are grilled, remove them from the skewer and serve hot. You can add a dash of chaat masala powder and squeeze some fresh lemon juice before serving the paneer tikka.
Paneer tikka goes very well with a mint-yoghurt dip. To make this dip, in a food processor take 1/4th cup yoghurt and add some Serrano chilies, mint leaves, salt and coriander leaves. Blend till you obtain a smooth paste and serve alongside the paneer tikka.
