Delicious Chicken Scampi Recipe

 

 

 

Chicken scampi is a very simple sautéed chicken dish, which can be prepared quite easily and within a short span of time. Chicken scampi tastes best with linguine noodles but any kind of noodles can be used instead of linguine.

Ingredients Required

4 boneless chicken breasts, cut into thin strips

1/5th cup of dry white vermouth

1 pound of linguine

½ cup of chopped red bell pepper

3 tablespoons of unsalted butter

2 teaspoons of fresh lemon juice

1/2 cup of chopped yellow bell pepper

Salt, to taste

1 teaspoon + ½ teaspoon of minced garlic

1/3rd teaspoon of lemon zest

Freshly grounded black pepper, to taste

3 teaspoons of fresh chopped parsley

1 large skillet

1 kitchen chopper

1 grater

1 large pot

1 colander


Method Of Cooking

1.  Set a skillet on medium heat and grease it with 2 tablespoons of unsalted butter. Heat up the butter until it completely melts. In the meantime, keep the chicken pieces on a plate and season them nicely on both sides with some salt and black pepper. Once the butter stops foaming, add the chicken pieces to the butter and fry them until they are nicely browned. Turn the chicken pieces and fry the other sides for 1-2 minutes more, or until browned. 2.  Once done, separate out the chicken pieces using a slotted spoon and keep on a plate. Now add some more butter if you want and then add the chopped bell peppers to the skillet. Sauté the bell peppers until tender and wilted. Once done, transfer the sautéed bell peppers to the plate with the chicken and keep aside.

3.  Now put the minced garlic and sauté it until slightly browned and aromatic. Then add the bell peppers to the minced garlic and stir to nicely combine the garlic with the bell peppers. Once done, transfer the garlic mixed bell peppers to the plate with the chicken and set aside.

4.  Then put the dry white vermouth and the lemon juice to the skillet and stir to combine both the things nicely. Cook the sauce on low heat until slightly thickened. In the meantime, set a pot on the hob and fill it with 4-5 cups of water. Add some salt to the water and let the water come to boil on high heat. Once the water starts boiling, add-in the linguine and cook the noodles al-dente.




5.  Keep an eye on the sauce and add the lemon zest, a bit of salt and black pepper once it gets reduced. Then add in the fried chicken and the sautéed bell peppers and stir to nicely combine with the sauce. Finally, stir-in the chopped parsley and cook the chicken for another 30 seconds.

6.  Now drain the noodles using a colander and let the colander sit on the sink, so that all of the water can drip out. Once completely dried, transfer the noodle to a bowl. Add the chicken to the noodles and toss the noodles to mix the chicken pieces nicely with the noodles. Once done, divide the noodles into equal servings and serve.
