Lemon Jello Cake

Ingredients Required



For The Vanilla Cake

1½ cup refined flour



1 cup sugar



½ cup butter



2 eggs



½ tsp baking powder



1 tsp vanilla extract



¼ tsp salt



½ cup milk



For The Lemon Jello

2 boxes lemon flavored gelatin



Water



For The Whipped Cream

½ cup double cream



½ tsp vanilla extract



2 tbsp sugar



Method



For The Vanilla Cake

Preheat the oven to 180 degrees C. Powder the sugar using a blender and soften the butter. In a medium-sized bowl, cream the butter and sugar until light and fluffy. In another bowl, add eggs and vanilla essence and beat them until stiff. Sift the refined flour, baking powder and salt together. Add the beaten egg to the sugar-butter mixture and combine well. Fold in the flour mixture alternating with milk, beating well after each addition. Continue beating until you get a smooth batter. Grease and dust a suitable cake tray. Pour the batter into the tray and place it in the preheated oven. Bake the cake for 25 minutes or until the top is golden brown and a tooth pick inserted in the center comes out clean.





After the cake cools for 15 minutes, poke holes all over the surface of the cake with a fork or chop stick. Do not make holes that penetrate to the bottom of the pan as it might affect the absorption of lemon gelatin in the cake.



For The Lemon Jello

In the meantime, prepare the lemon gelatin as directed in the package but do not chill it.  Pour the gelatin over the poked surface of the cake. The holes on the surface will allow the gelatin to seep into the cake. Now place the cake in the freezer until the gelatin sets for about 3-4 hours.



For The Whipped Cream Topping

To prepare the whipped cream, place a medium-sized bowl in a large pan containing cold water and ice cubes. Add double cream, vanilla essence and sugar into the bowl. Beat the cream continuously using an electric beater until stiff.  Cover and refrigerate the cream until the jello cake sets.

When the cake is set, loosen the sides of the cake from the pan with a knife and turn it onto a serving platter. Spread the whipped cream on top of the cake and serve. You can garnish the cake with M&M or colorful candy sprinkles to improve its visual appeal.

You can add a variety of flavors and colors  to improve the taste of the cake.
