Zucchini Bread Recipe

This is a healthy and scrumptious bread recipe that uses the vegetable zucchini and oil rather than butter. One would hardly be able to taste the zucchini after baking and it basically imparts a wonderful moistness to the bread. The inclusion of shredded apples is an interesting twist to the regular recipe and in combination with the nuts as well as some ground spices proffers a great taste and flavour to the bread.

Flour, all purpose (four cups or 420 grams)

Zucchini, raw and grated (3)

Vegetable oil (240 milliliters)

Apple, firm and shredded (1 medium)

Egg (three)

Walnut or pecan (110 grams)

Sugar, granulated cane (half kilogram) or honey (350 grams)

Bicarbonate of soda (a teaspoon)

Vanilla extract (two teaspoonfuls)

Powdered cinnamon (two teaspoonfuls)

Salt (two teaspoonfuls)

Baking powder (1/2 teaspoon)


Preparations for making the zucchini bread initiate by preheating the oven to 170 degrees Celsius with the oven rack position in the center. Two bread loaf pans (eight inches) are buttered or greased with some cooking spray and lightly floured. The nuts are then added to a pan placed over a low flame till they have toasted (turned light brown in appearance) or for around seven to eight minutes. The zucchini with the top and base sliced off are grated with a shredding tool. The skin has been left intact as the flecks of dark green look appealing once the baked bread is sliced through. The apple used in the recipe is good-quality, firm green variety which too has been grated with the skin on.

We now proceed with the dough preparation for which the eggs are added to a medium sized glass bowl and beaten with a wire whisk till frothiness is observed. Subsequently, the honey or granulated sugar is added and vigorously whisking continued to combine them well. The vegetable oil is poured in small batches and incorporated well before further addition. The grated green apple and zucchini are also mixed well into the batter along with the vanilla extract.

We commence with preparing the dry ingredients for which the baking powder is added to the all purpose flour taken in a medium sized glass bowl. The sodium bicarbonate, powdered nutmeg and cinnamon along with the salt are then added into the bowl. Briefly mix the ingredients together with a spoon prior to adding the toasted walnuts and/or pecans.

The damp and dry ingredients in the two separate bowls are now combined together and stirred briefly for combining and binding them. Avoid overworking the mixture as one can end up with a dough that has too much elasticity. The dough is emptied into the prepped baking pans up to three-quarters of the way up and then placed in the centrally positioned rack of the oven for fifty minutes to an hour.

Thereafter, the pans are tested to check whether they have baked through by sticking a wooden skewer into the core of the bread. If it comes out clean and dry sans any dough on it then it is ready to be removed. After taking the bread loaves out of the baking pan set aside for brief cooling prior to dicing slices of them.
