Banana muffins are a favorite among kids and adults for breakfast or as a quick snack. Since bananas are among the most commonly available fruits, you can easily bake these delicious muffins and store them for a few days. Moreover, bananas are nutritious too and help make the muffins healthy and wholesome.

You can add more fiber and vitamins to your muffins when baking them at home. Replacing refined flour with whole wheat flour or adding high-fiber cereals such as oats to the recipe will make these banana muffins truly healthy and nutritive.

This article describes two banana muffin recipes that are slightly modified to enhance their nutrition value and have been given a fresh twist to add some new flavors.

Whole Wheat Banana Walnut Muffin:

This recipe uses whole wheat flour instead of refined flour, making it high in fiber and vitamins. The addition of walnuts will make this muffin rich in omega-3 fatty acids and Vitamin B, thus making it a wholesome snack or breakfast item.In a large mixing bowl, combine 1 and half cups of whole wheat flour with 2 teaspoons baking powder and salt.

Mix all the ingredients well. In another bowl, whisk together 1 beaten egg, 3/4th cup mashed banana, ½ cup brown sugar, and 1/4th cup canola oil. Add all these ingredients to the dry flour mix.

Once again blend all ingredients well. Finally, add about half a cup of roughly chopped walnuts to the muffin batter.Grease the muffin moulds with a little oil or butter and lightly dust them with flour. Pour the muffin batter into the moulds and bake at 400 degree Fahrenheit for 20 minutes.

Strawberry Banana Muffins:

This recipe combines the goodness of whole wheat flour, strawberries and bananas to make healthy wholesome muffins.To make these muffins, take a mixing bowl and combine 1 cup whole wheat flour, ½ cup refined flour and ¼ th cup wheat germ.

In another large bowl, whisk 2 eggs, ½ cup unsalted butter and 1 cup brown sugar. Add 2 ripe mashed bananas, 1/3 cup skim milk and little vanilla essence to this mix and blend well.

Slowly add the flour to this banana and butter mix and combine all ingredients well. Lastly add about 1 cup frozen strawberries and gently fold in the muffin batter.Bake the muffins at 350 degree Fahrenheit for 20 minutes.
