Mixed Eggplants Curry

It is a very tasty preparation and can be cooked easily. It is nutritious too. Egg plant is a good source of dietary fiber. It also contains vitaminB1, B6 and potassium. It is also a good source of copper, magnesium, manganese, phosphorus, niacin and folic acid.





Ingredients:



•    2 large sized Eggplants/ aubergines/ brinjals



•    1 onion



•    ½ inch ginger



•    10 cloves of garlic



•    3 eggs



•    Cooking oil



•    Butter oil



•    1 Capsicum



•    1 large tomato



•    2-3 green chili



•    Coriander leaves



•    Salt







Preparation:




Rub few drops of oil on the egg plants. Bake them and remove the skin and mash the flesh. Keep them aside. Finely chop onion and grind ginger and garlic into fine paste. Chop capsicum and tomato also in medium sized pieces. Chop green chilies and eliminate their seeds. Chop coriander very finely. Beat eggs properly.

Process:



In a pan heat 2-3 table spoon of butter-oil and pour the beaten eggs. With the help of a large spoon stir continuously and scramble the eggs. Remove them from the pan and keep them aside. After that again take 2-3 spoons of cooking oil and heat them in the pan. Discotecas en las palmas de gran canarias

Fry chopped onions. After that add garlic and ginger paste respectively and fry them. Add chopped tomato, add salt and stir them until they are melted away.  Add mashed eggplant flesh. Stir them continuously to mix everything properly.

When the preparation is ready add chopped capsicum, green chili and fried eggs. Again stir them properly to mix everything well. Remove them from heat and garnish them with freshly chopped coriander leaves.







Serve them hot with fresh breads. In place of egg you also can use small meat chunks or small pieces of cottage cheese.

American  diabetes Association recommended eggplant based diet is the most appropriate diet for type-2 diabetes. Eggplant also reduces cholesterol. It prevents cancer to some  extent.





In this preparation eggs also have been used. Egg is a good source of vitamins and minerals. Eggs are great for eyes and lower the risk of developing cataract. Egg promote healthy hair and nails because of high sulfur content, vitamins and minerals.
