Ingredients Required

6 salmon fillets, skinless

1 small red onion, finely chopped

4 tablespoons of fresh lemon juice

1 large ripe mango, peeled and pitted

Salt, to taste

2 small tomatoes, diced

A bunch of fresh cilantro, finely chopped

1 red chili, deseeded and finely chopped

Freshly grounded black pepper

Extra virgin olive oil

1 sharp large knife

1 small knife

1 peeler

1 medium sized bowl


Method Of Cooking

1. Chopping the vegetables and the fruits is the main part of this recipe. So for that, first take the mango and cut off the top and bottom parts of it. Then using a peeler, peel the skin of the mango carefully. Once done, slice the mango into 4 slices and then slice those pieces more finely. Once done, chop the mango slices in such a way that you get small cubes out of it.

2. Then take the onion and peel it as well. Discard the top and bottom portions of the onion and then chop it as finely as you can. Because the secret to a great salsa is to chop the vegetables as finely as possible. Follow that by dicing the tomatoes. Then take the red chili and run the knife through the middle of it to slit open the chili. Once done, discard the pulp and the seeds. Then slice the chili finely before chopping it up into finer particles.

3. Once everything is done, hold the cilantro leaves in a bunch and then chop them very finely using a large kitchen knife. Then transfer all of the above chopped vegetables to a medium sized bowl and season the salsa with a pinch of salt and a dash of freshly ground black pepper.




4. Then prepare your broiler to cook the salmon fillets in that. In the meantime, keep the fillets on a plate and season both the sides of the fillets with enough salt and black pepper. Then take the baking sheet and grease its base and sides nicely with some vegetable oil. After that, arrange the fillets in the tray side by side, by maintaining some distance in between each fillet. Once ready, set the baking tray 4-inches above the heat and broil the salmon fillets for 10-12 minutes or until opaque and cooked through.

5. Once the salmon fillets are broiled remove the tray from the boiler and keep aside on a wire rack to cool down the salmon fillets. Once the salmon fillets are cooled enough to handle, transfer them to serving plates and top each one of them with some salsa. Finally, drizzle a dash of olive oil and lemon juice over the fillets and garnish with some more chopped coriander.
