Difficulty Level: Easy
Servings Per Recipe: 4-5
Preparation Time Required: 10-15 Minutes
Cooking Time Required: 2- 2 ½ Hours
Appliances Required
1 sharp knife
1 aluminum foil
1 mallet
1 plate
1 skillet
1 tong
1 9×13 inch baking tray
Cooking spray
Ingredients Required
2 pounds of round steak
1 cup of onion, sliced
2 teaspoon of Worcestershire sauce
500 grams of mushrooms, halved or quartered
2 tablespoons of tomato paste
4 tablespoons of vermouth or red wine
2 cups of beef broth
1 cup + ½ cup of flour, for dredging
2 stalks of celery, finely chopped
1 teaspoon of dried oregano
1 teaspoon of dry mustard powder
3 large cloves of garlic, minced
14 ounces of chopped tomatoes, with juice
Salt, to taste
1 teaspoon of paprika powder
Freshly grounded black pepper
Vegetable oil or olive oil, for frying
Method of cooking:
1. Place the steaks on your working surface and cover one of them with a heavy duty aluminum foil. Then using a mallet, pound the steak to tenderize it because round steak is a very tough cut and cannot be cooked easily without pounding it. Once done, unwarp the steak and keep it aside. Pound the rest of the steaks in the same way and then season both sides of each steak with sufficient amounts of salt and black pepper. Then rub the seasonings nicely onto the steaks to allow the spices to penetrate into the meat.

2. Once done, dredge the steaks nicely in flour and keep aside. Now heat a skillet on medium heat and grease it lightly with about 3-4 tablespoons of oil. Once the oil starts crackling, add the steaks and fry them for about 5 minutes on each side or until they are nicely browned and are no longer pink. Now deglaze the skillet with vermouth and scrape off any browned bits from the base of the skillet. Cook the alcohol until it gets reduced to about half of its original quantity.
3. Then throw in the mushrooms and the celery and cook for about 3-4 minutes or until the mushrooms are shrunk. After that, add the sliced onions and the garlic to the gravy and cook for another 5-7 minutes on medium heat, while stirring the gravy occasionally. Then season the vegetables with some salt and black pepper and add the tomato paste to it.
4. Stir the gravy to nicely mix the tomato paste with the rest of the things. After that, add the oregano, mustard powder and the paprika powder to the gravy. Stir and mix all of the ingredients and then pour the beef broth, Worcestershire sauce and the chopped tomatoes into the skillet. Cook the sauce on medium heat until it starts bubbling.
5. Once that happens, arrange the steaks into a baking tray and top with sauce. Insert the tray into an oven that has been preheated to 375 degrees Fahrenheit and cook the steaks for 1 ½ to 2 hours or until they are fork tender.
