Ingredients

Fresh pick of jumbo shrimps 12-15 (de-shelled and de-veined with tails inact)

For Shrimp Cocktail Sauce

Mayonnaise (4-5 tablespoons)

Tomato Ketchup (1.5 tablespoons)

Cayenne Pepper (2 teaspoons)

Juice of half a lemon

Worcestershire Sauce (2 tablespoons)

Tabasco Sauce (1 tsp)

Brandy (5 ml)

Procedure

With a fresh batch of local shrimps, the first step is to boil them by dunking them in a deep dish vessel almost ¾ th full of searing water that has been seasoned with a tablespoon of salt, 2-3 fresh rosemary stalks, bay leaves (3) and a tablespoon of powdered garlic.

Leave the shrimps in the boiling water for just around 1.5 to 2 minutes and then drain off. Take off any whole spices and immediately immerse the shrimps in a bowl full of ice-cold water to prevent over-cooking.

Sauce preparation involves properly whisking together the ingredients just mentioned till well-coalesced. The final step is assembling together the shrimp cocktail. For this take some wide-mouthed cocktail glasses and layer them with fresh shredded lettuce leaves. Now, drizzle around two tablespoons of prepared sauce over the lettuce.

Next hack an avocado in half and with a sharp knife remove the tough seed and keep scoring the flesh into smallish squares, squeeze half a lime over it, spoon out and add a tablespoon over the lettuce bed.

Pile on five to six shrimps in each glass and layering on more of the sauce over them till they are drenched in it. Add a dash of cayenne pepper, garnished with lemon wedges and your immaculate prawn cocktail is ready to be dished out with tortillas for added crunch. radios en vivo y radios live en español
